I'll Keep Running and Running

The gym felt so good today. I ran 4 1/4 miles on the treadmill. I wanted to keep running and running. My legs just wanted to keep going and going. I almost wish I didn't have my spin class today. I would have felt off by skipping my spin and continued running. I'm a very scheduled oriented person. I love sticking to schedules. I have post-its and little notes all over and also reminders in my phones of what needs to happen when.

After getting things done around the house, I made dinner. Most of the dinner was made, I just needed to put it together and heat it up. I made chicken pot pies, my own way. I took my pre-cooked chicken (from Saturday when I roasted that entire chicken)

I added some gravy and water under a bag of frozen veggies (thawed).

Then I made some biscuits (un-cooked) and placed them on top and brushed them with a little butter. I made some extra biscuits and had them on the side.

I used 4 oz. ramekins and made 4 of these (2 for me and 2 for hubby). I am stuffed and I feel like I ate a pretty healthy meal. There's no need for a snack tonight. I do feel like drinking some wine, though. I'm not sure why. I'm glad we don't have any, because that's the last thing I need before my long run tomorrow.

  5. Those look great, like the biscuit topping. I'd say burritos are my comfort food.

    I LOVE runs like that. For me they seem to come pretty few and far between, but that is as close to the 'zone' as I ever get
