A Salad a Day Keeps the Dr Away

My boss has her own little garden at her house. Since she has so many tomato and cucumber plants, she can't possibly eat everything herself. So, the only thing to do is to bring everything in. This is just the first week of her bringing things in and we're packed full (it a huge, great way)! She's brought in some lemon cucumbers, big tomatoes,



And a million small tomatoes.

We eat salads every night (I love salads, too, especially during the summer). I've found some tomato recipes, so I'll be making a lot of those very soon.


What is your favorite summer time veggie and how do you use it?

  1. when it's tomato season we just make a huge pot of tomato sauce (chopped onions, olive oil, diced tomato, salt a bit of basil, let boil for a couple of hours) and then freeze single servings or put it in jars and then seal them.
    Great for dressing pasta, gnocchi or whatever...

  2. I make lots of homemade tomato sauce, and sometimes just eat sliced tomatoes with olive oil and balsamic vinegar--delicious!
