3 Days and Counting

I feel so much better today. My head doesn't hurts and my foot feels so much better! It's not red anymore and the bruise is going away. I can't wait until my race on Saturday (as you can tell by my talking about it all week). I just hope I can keep running on it. Saturday is my real test. I hope I pass!

Tonight for dinner, I made my chicken and dumplings, once again. I love this recipe! It's so easy! I took some already made chicken (depending on much you prefer), 1/4 big bag of frozen veggies (thawed), and 2 cans of cream of chicken soup and heated it through on the stove top. Then, I took a biscuit mix and made some dumplings. I foiled and greased a 8"x8" glass pan and poured the stove top mixture inside and topped it with the dumplings. I baked at 350 for 15 minutes, or so.


This tasted so good on this chilly night. Prefect while we caught up on Sons of Anarchy.



The last bit of PB chocolate chip oatmeal cookies are for dessert. YUM!
