Same ol, same ol breakfast, an apple for my noon time snack, 1/2 whole wheat sandwich for lunch and a kiwi on my way out to the gym.
On my way to the gym, I really didn't want to go. I almost turned right (to go home), instead of turning left (to go to the gym). I was strong and stuck to my game plan, I made a left hand turn. After changing, I was thinking how I didn't want to run, at all. I talked myself into running at least 1 mile. After 1 mile, I went 2, then 3.1, then 3.5, and why not the full 4 miles (44:38). My legs were still sore from yesterdays 4 miler. Once I finished, I felt so good. Then, it was time for my spin class (55 minutes).
We had a sub for our instructor. I don't really like not having our usual instructor. Other people don''t do exactly how the normal instructors do. Oh well, it was still a decent workout.
Here I am on my way home from the gym. Don't I look tired? I am, I'm exhausted.
I was starving once I got home, so I started preparing dinner. I was making my own version of my husbands favorite meal: spaghetti. I wanted to get as many veggies as I could, and have it still taste good.
I cut up some zucchini, yellow cucumber, onion, garlic, rosemary, oregano, and parsley. I browned everything on the stove top.
I then added 1 pound of ground chicken, and the herbs.
The, I added some pre-made spaghetti sauce and the rest of my colby jack cheese. I needed to finish up some stuff that was in my fridge and was about to go bad.
I added the cooked spaghetti to everything and mixed well. I let it cool a little before I served. So yummy! I'm glad it turned out. I was afraid these flavors weren't going to mesh well.
Tonight's dessert, I could eat everyday day for every meal. I had strawberry flavor Greek yogurt (1/2) and freshly picked blackberries. I mixed them well and inhaled instantly. It was so filling and about 100 calories.
On another note, I weighted myself for the first time in one month. I was scared to weight myself because I thought I had been eating too many calories. Little did I know, I know what I'm doing. I am now BELOW my goal weight (only by .6 pounds). I weighted myself about 1/2 an hour after I ate, so I was extremely full, so I may weight less than the scale actually showed. I like seeing my weight after I eat. I'm always eating, so it's nice to see what my "real" weight is.

Tomorrow is grocery shopping day. I'm going to see how much stuff I can get for as cheap as possible. I love Winco! It helps keep my budget in check.
I am still smelly (I haven't had time to take a shower). I desperately need to hop in the shower and wash off this stink.
I wish everyone good luck that is running in the SF marathon this weekend!
What had been your favorite race you've done to date?
Good call making that left turn and getting to the gym!
ReplyDeleteDinner looks delish.
I have never cooked cucumber. Interesting. Looks wonderful. ;)
ReplyDeleteWhat a great way to use zucchini! And I could definitely eat yogurt and fresh blackberries every day, too.
ReplyDeleteI love how you get so much fresh veggies into everyday meals. This looks delicious! I'll have to try a version of this for me and my hubby!
ReplyDeleteI love this idea for the pasta, it sounds great. I don't eat chicken, but I could easily sub in TVP crumbles. Awesome! I haven't done any races in a looonnng time, but I really want to do a 5K soon. I'm honestly not sure where to look for them to sign up!
ReplyDelete@ Marie: Yuo can sign for for races on active.com, ffsac.com, and so many more sites. These are the biggest ones.
