Date Night!!

Tonight was a very exciting night for us! Hubs and I went on a date. We rarely ever do this. The first thing was dinner. I was starving after work. I really worked up an appetite.

We went to CPK for some yummy pizza. Here's how we started. We shared some bread and we each got a soda. I haven't had a soda in a few months. I can tell. It was so sugary and it tasted so weird. I don't think I'll be having another any time soon.

We each got our own personal pizza (of course, since that's all they have). I got the pepperoni pizza. I can't remember what hubs got, but it looked weird. It had lettuce on it.

Here I am nice and full after our yummy dinner!

Even though it was freezing, I had to have some frozen yogurt. We walked to Big Spoon. This is the second time I've ever had this yogurt. It was so good! I think it's pretty cool, they charge by the ounce. They don't care what you have in it, just what it weights.
I got milk chocolate froyo with strawberries and a couple chocolate covered espresso beans. So good.

I was able to warm up In Peete's Coffee while hubs enjoyed his espresso. I didn't want one because I'm going to be getting up early tomorrow. I want to try to attempt another 10k. If it gets accomplished, I get to treat myself to a donut (and I'll bring one home for hubs).
Here's hoping for a 10k!

Cooking Healthy

I was able to run a 5k at the gym today! I am pretty happy with those results. I wasn't expecting much, but then this came! I had a small amount of pain in my knee, and I want to take it easy, so I can run a 10k run on Saturday (not a race), so I stopped. I continued my workout with my daily (twice a day) PT.

Tonight's dinner was something that we don't eat that much of. I made meatloaf and flat bread. I got the recipe for the flat bread from Food Network Channel. In the recipe, it included a topping, but I only made the bread part.

The meatloaf, I got from my cookbook called "Cook Yourself Thin". These girls use to had a show on Lifetime. They gear this towards women. It's a great book! They try to take everyday type of food and make it healthier.

In this recipe, I only made the actual meatloaf,

and the sauce.

Here's the outcome. It all tasted pretty good. Because the flat bread didn't have a dipping sauce, so it was a little dry. I would take a bite from the meatloaf and then the bread. It was fine that way. Next time, I will make a sauce for it.

This may look gross, but it tasted oh so good!

Dessert was about 1/2 cup of greek yogurt with some home made granola. YUM!! This is my favorite dessert right now. I've turned my hubs on to this, too.
Don't forget to answer my poll that is off to the right. Can you guess what the results are going to be?

Bummer!!

Bummer, this describes my workout tonight. I wasn't even able to run 1/4 of a mile. I expected my knee to hurt, but not even 1/4 of a mile, bummer. That's ok, I need to heal some more, which I knew. I tried the elliptical, and no go. It was an early night from the gym and came home to icing my knee. I love the way icing my knee feels, so much better afterwards!

My hubs thought this was a cute picture. Here's Scoutie Poo hanging on to the remote.

10k is in My Horizon

Today was a great day overall! Work was perfect! I had some new ideas and everyone loved them!! Then, at the gym, I finally ran my 10k! It looks like my 10k I wanted to do in a few weeks may be possible.

When I got on the treadmill, I was just thinking that I would run 2 miles, when that came (and no pain), 3 miles, then 4, 5 and 6. At mile 6, I had more pain and pushed through until 6.2 miles were completed. I saw 8 people come and go, finishing their workouts on the treadmill. I was dripping with sweat while running and I could feel people looking at my time on the screen. Afterwards, I stretched and did my PT. Here I am after my shower, and getting ready to fix dinner. My face is still red.

Tonight's dinner was Parm Chicken ad brown rice from Brown Eyed Baker. Here's the recipe:

Directions.

The rice need more time to cook and more liquid (I'd say instead of 1 1/2 cups, go with 2 cups of broth). This meant that the rice was a little crunchy. I think my jaw got a good workout with it. I was too hungry to finish cooking it. With this, we shared an artichoke. Since they really aren't in season right now, there wasn't too much meat. Hey, 78 cents, who can beat that. We got our money out of it.

Thanks so much for taking the time to fill out my poll. The results are: 35% of you are injured (I'm in that boat), 57% are not injured (so jealous of you) and 7% have just healed (jealous of you, too). I'm glad to hear so many of you aren't injured. I will post a new poll tomorrow. Keep an eye out.
What is your favorite veggie? Mine is green beans!!! I could eat them all day long.

We All Scream!!

At the last minute, I decided to take the day off from the gym. Besides my PT, there was no workout. I think my legs were begging for a day off. I have been pushing them as much as my knee has let me. I worked out 7 days in a row and just needed a break. It feels so good and my legs will love me tomorrow!

I had my pasta veggie thing for dinner and was really craving something bad for me afterwards. My thing is that if I want it, I can have it, just in moderation. I wanted ice cream, so I had it.

Hubs picked me up some rocky road ice cream and it hit the spot! I haven't had anything really sugary since Jan. 4 (yes, I keep track). It was when I had those cinnamon rolls my boss made. I've been so good and this has been my only craving that I allowed myself to have (and my body felt like it really wanted it). When I start to pick up more miles, I will be eating some donuts (in moderation).

What is your weakness? When it's around, there's no stopping you? I have way too many: pizza and brownies are the worst for me.

Some of My Favorite Things...

I got up early this morning and went for a run outside!! I'm so glad that I felt comfortable enough to go for a short run (1.75 miles) outdoors. I haven't done this in months! My knee just started to give me a painful hint toward the end. This usually means that I have about 1/2 mile left. I felt so good!

It was weird running outside in the dark. I had some of my new reflective gear on. There were street lights the entire way (except for about .1 miles in the beginning). At the end, I came up and over this hill just as the sun was coming up. I twas beautiful! Here I am after running. Nice and sweaty!

After eating and showering, I laid on the couch with the girls and caught up on some shows.

This post is mostly about my favorite things (in no particular order). So, here they are (I have so many, it would get boring).
Cook books. I love cooking/baking, so this are the best.

My Nathan water bottle.

Of course, my Garmin.

Netflix. We watch movies all the time. I'm going to watch one once I'm finished here.

I'm obsessed with fruit. In the bowl this week are some oranges, pears and bananas.

Chapstick. I am completely addicted (no joke).

My Kitchen Aid mixer. Love it! I makes my life so much easier (thanks mom & dad).

I can't start my day without a morning cup of coffee.

What are your favorite things? How do you like my new header? What do you think?

Bad Run & Mimi's

I had a bad day at the gym today. I was only able to run 1/2 mile. Stupid me, forgot to take my pain pills before I left (and didn't bring them with me). I made sure I brought everything else, except that. I still did my PT and tried running afterwards. That was a no go. I came home and iced my knee while I drank some warm coffee and watched a show. My knee feels better now. In the morning, I'm going to get up early and go for a run outside. This will be my first run outside in waaaay too long. I'm charging my Garmin as we speak. I can't wait. I get to try out my new reflective gear and my warm up sleeves. Yay!!

Tonight my father in law took us out to dinner (he's in town from Idaho). We went to Mimi's. We needed to go to the mall afterwards, so it worked prefect! At dinner, I had the cobb salad. It's my favorite! I've attempted to make it at home, but it's never the same. With the meal, I got a free muffin. I chose the banana chocolate chip. Hey, it'll be a good breakfast after my run in the morning. And here's my side of ranch dressing.

It was pretty good with the egg, bacon, avocado, green onions, blue cheese and bacon (according to the menu it had about 517 calories).

After filling up on dinner, we headed over to the mall and looked around. We haven't been there since the fire over the summer. I can't believe that the fire closed almost half the mall for a very long time.

I was able to get my calendar for this year (yay for 50% off). It's H.R. Giger calender. I can't wait to update it tomorrow. Don't forget to answer my poll off to the right!
