I love the Wind in My Hair

This morning was the same thing. I was pretty busy at work and it was a co-workers birthday. We always celebrate birthdays at work. So, I had to join in on the festivities (aka food) just to make him happy. The boss made salsa and brought chips. And, they also picked up some KFC chicken wings. Hey, chicken it good for you, right? I was good and only had 1 piece. Instead of a cake, he got a candle in one of the wings.

I was so full from the good food all day, I didn't have lunch. Before heading out of work, I ate the other 1/2 of my energy bar. I didn't think it helped yesterday, but I think it really helped today. My goal was to run 5 miles. I didn't care the speed (because of my feet), I just wanted to finish. When 5 miles came around, I wanted to do more. Next step 5 1/4 miles, still feeling good and moved on top 5 1/2 miles (59:49, my longest run to date). I wanted to do more, but I had some errands to do after the gym. It felt so good to run. My feet did hurt a little, but nothing like last week.

When I was driving to the grocery store, I had all my windows down. I love it after a good, long run and the wind is cooling off all the sweat. It felt so good. I think that may be one of the things I love after a good, hard workout. It shows me all my hard work. Did I already say that the wind felt good running through my sweaty hair??

After the grocery store, I needed to pick some things up at the pet store. By the time I finally got home, I was starving and I still needed to put the food away. I wasn't in the mood to make the brown rice from yesterday (at least 30 minutes). So, I had my Greek Gods strawberry yogurt and Rudi's toast with PB on it. I washed everything down with about 4 oz. of non fat milk (small amount because I'm not a fan of milk by itself). That hit the spot.

I'm currently sitting here typing while relaxing my legs in my compression socks. My legs are feeling better as I type! I'm still pretty smelly. I haven't had a chance to take a shower yet. I need to wash all this salt off. I can feel it as I rub my face. I think if I were to lay in a bath, I would make salt water (un-drinkable kind). Yuck!

To answer come questions: I didn't have to mash the apples in the crock pot. I just stirred them when ever I went into the kitchen. I have also made this while I was away (no stirring). Either way works.
Racing Dawn: can you please email that pot pie recipe? It sounds good!

A Great Saturday!!

Here's how I feel asleep (on the couch) on Friday. Cuddling with my Izzie:

Since I'm trying to let me feet heal this weekend, my day started out with sleeping in. When I woke up (at 9:30) I had some coffee, and 2 pieces of Rudi's cinnamon and raisin bread. I can't believe how good this was. I'm not even a raisin fan. I can't stand them, I think they're too sweet. This was soo good. I put a little butter on top and gobbled these up with some coffee.

We had to take the girls to the vet today to get checked out. They both have a minor cold and eye infection (totally normal from coming from the SPCA). I was expecting this. I don't know if I've told you this, but I use to be a veterinary technician for about 8 years. So, I know what to expect and mostly how to treat. I loved that job, but always wanted to be a graphic designer and decided to take the plunge and go out and get a job in my field. I did and I love it!
Lunch was just a PB&J sandwich with some chips. Noting special, but very good. I decided I was going to find out what was wrong with my Garmin. Before I called the place where I got it (to see if I could exchange it since I was still under warranty), I decided one last time, to make sure it wouldn't turn on to be charged. I feel sooo stupid, but it turned on. Before I left for work on Thursday, the watch said it was fully charged and then shut off and wouldn't turn on when I tried to charge it at work. So weird. Oh well, I'm just happy I can wear it and love it like it should be loved!!
Dinner was nothing special. I had pasta and wanted to make something for only 1 day because there's something special I want to make tonight for dinner. So, I put together cooked pasta, chopped garlic, chopped tomatoes, 1/4 can black beans, finely chopped cooked chicken, black olives and feta cheese. I mixed everything together and enjoyed.

This was a good meal! My hubby and I both enjoyed it while we watched Day Breakers. We finished the night off with some cocktails and popcorn. A great ending to a great day!

The Girls are Home!

This morning, we got up early and enjoyed a cup of coffee along with one of my banana crunch muffins. Afterwards, we went to run some errands. Then, we got to pick up our kittens. The SPCA was pretty busy, but they got us in quickly and we got our girls home fast (pictures at the end). They are so entertaining.

My parent, SIL and niece came over to see them. They did so good with our little niece (and she did so good with them).

After they left, I was pretty hungry, so I had a 1/2 whole wheat (Rudi's) sandwich with some tortilla chips. Today was a non-workout day. It was nice to relax all day long. For my afternoon snack, I had a Skinny Cow. I've never had these before, so I asked my hubby to buy me some for my b-day (which he did a couple weeks ago). It was pretty good. The best thing, one sandwich has only 160 calories. No too shabby for an ice cream sandwich.

Dinner was left over burritos and some water to wash it down. I usually drink water with most of my meals. I find it quenches my thirst better than most drinks.

Now, time to introduce the new members to our family...

This is Scout. This cat is more Jason's than mine. She is very playful and so little. A very skinny cat. She has a charcoal colored coat.

Scout, again, exploring the house.

I know this picture doesn't show it, but Izzie is mainly my cat. She is pure black (maybe 10 white hairs) and very lovable. She's my little love bug. I've already cuddled with her for about 2 hours today. She loves to play jungle gym.

Well, it's time to go back to play with the kittens. I have to try to see if they will sleep through the night. Here's to hoping so.
We're going to a family BBQ tomorrow. Do you have any plans?

Fabulous Friday!!

Another ordinary day. Super busy at work, but managed to take a short lunch (so I could leave early). I ate my 1/2 whole wheat sandwich (from Rudi's) and it was delicious! I love this bread. It was honey sweet flavor. So good!

By the time I got home, I had baking on my mind. I needed a snack until it was dinner time. I munched on Clif Bar's new crunch bar. It was chocolate chip flavor. I can't get enough of these. They were so kind to send these to me. There are 2 bars in each package. For both of them, there are only 160 calories. That works perfect for a snack for me. If I need to, I can only eat one. It's prefect!

I'll give more details tomorrow on exactly what I baked. I baked some banana nut cookies, and some banana nut crunch muffins (this isn't even 1/4 of what I baked here)...

I also baked banana nut cake.

Can you tell I was cleaning out my freezer full of bad bananas. They are prefect for this type of thing. Here is my baking mess. I was baking one thing right after another. I will be set for my snacks for this long weekend. I'm glad my hubby likes my baking!

Don't worry, the mess is all cleaned up. I had a lot more planned to bake. As soon as I finished baking these 3 things, I sat down to dinner. I made burritos with Stacey's tortillas. It was so good. I love home made burritos, beats store bought or restaurant any day.
Once I finished stuffing my face, I was thinking about all the baked goods there are. I also planned to make banana nut biscotti and banana granola bars. I will be bringing in some stuff to work on Tuesday, but his is a lot of food. I think I'll wait to bake the rest until another long weekend. I will be getting some in a few months.
Kitten count down: 13 1/2 hours!! I'm so excited. I think I'm too tired to be overly excited, though.
Did any of you do any baking for this weekend? (Or am I the only crazy one?)

Longest Run Yet!!

Today was another boring food day. Same ol food. I was so busy at work, I forgot to have lunch (take it and eat it). I had 1/2 of a Luna bar before heading to the gym.

The gym was great! It started with front row parking (I guess that's what you get when you get to the gym an hour earlier than normal). I got changed and was on the treadmill. I wasn't sure if I wanted to just run 4 1/2 miles or if I was up for running the next step, 5 miles. I was not in any pain and my run went smoothly. I ran 5 miles in 52:46. Another PR!! I love setting PR's. It's been a week of PR's. Such a great week!

When I got home, I re-fueled with 1/2 piece of Rudi's whole toast and added some smooth peanut butter on top. I washed this down with a little Vitiam Water. Very tasty. I tied me over until dinner.

For dinner, I had left overs from yesterday. I have a feeling, this weekend, you will see some good foods. I'm going to allow myself to eat whatever I want. I deserve a little break. There will be lots of baking tomorrow!!

Only 2 days until the kittens come home. I can't believe tomorrow is Friday already. This week has flown by. I thought this week was going to drag. I'm sure am glad it didn't.

I hope everyone has a great weekend!!
