After getting things done around the house, I made dinner. Most of the dinner was made, I just needed to put it together and heat it up. I made chicken pot pies, my own way. I took my pre-cooked chicken (from Saturday when I roasted that entire chicken)
I added some gravy and water under a bag of frozen veggies (thawed).
Then I made some biscuits (un-cooked) and placed them on top and brushed them with a little butter. I made some extra biscuits and had them on the side.
I used 4 oz. ramekins and made 4 of these (2 for me and 2 for hubby). I am stuffed and I feel like I ate a pretty healthy meal. There's no need for a snack tonight. I do feel like drinking some wine, though. I'm not sure why. I'm glad we don't have any, because that's the last thing I need before my long run tomorrow.

ReplyDeleteI LOVE runs like that. For me they seem to come pretty few and far between, but that is as close to the 'zone' as I ever get
